Hegi Soba : Japanese Noodle

Wiki

Hegi Soba : Japanese Noodle
It was the first time I got off at Suehirocho Station on the Ginza Line.
My purpose was "3331 Arts Chiyoda", although I would have a lunch.
I went to a Hegi Soba restaurant, "Echigo-ya" which is between the Station and "3331 Arts Chiyoda" with R.
It was the first time I heard of 'Hegi Soba' and ate it.
Soba is the Japanese name for buckwheat and is made into thin noodles.
'Hegi Soba' is a type of Soba, using Funori, a kind of seaweed which makes it chewy and the Soba is served on a special wooden dish which is called Hegi.
'Hegi Soba' came from Uonuma region, Nigata Prefecture (above Map).
'Echigo Province' (above Map) corresponds today to Nigata Prefecture, except Sado Island.
The restaurant, "Echigo-ya" was managed for 38 years in Okachimachi, Tokyo and then they moved here.
When we visited there it was after lunch time, so there was not busy.
However, a group looking like regular customers at a back table had just started their party, so I felt the restaurant is popular.
R had Hegi Soba 1.5 portion with Nori and Tempura.

My Hegi Soba, 1.5 portion with Dashimaki-tamago : Japanese omelette.
I enjoyed them.
We would join a review meeting after lunch,
so we did not have Sake.
The staff are kindly and friendly.
